Verjus means “green juice” in French. It is a flavorful juice pressed from grapes harvested very early in the season, with bright flavors and crisp acidity that add intense fruit accents to recipes. Thyme Verjus Dressing
- 1/3 cup Kendall-Jackson Red Verjus
- 1/3 cup grapeseed oil
- 1 large shallot, finely chopped
- 2 teaspoons fresh thyme leaves
Whisk all ingredients in a small bowl to blend. Season dressing to taste with salt & pepper. This verjus dressing is delicious on grilled pear salad with feta & hazelnuts on a bed of butter lettuce.
