Title:  Merlot Shelf Life

What is the optimal shelf life of K-J Merlot after the bottle has been opened?


Once a bottle of red wine is uncorked, it needs to be enjoyed. It may last up to a few days before it oxidizises and the flavor changes.    

 

Unopened wines are good upon release, some just tend to be more age worthy than others.

Highland Estates: 10-25 years+
Grand Reserve: 7 - 20 years+
Vintner's Reserve: 5 - 15 years+

Title:  rubber stoppers

Do you feel using a pump and rubber stopper to remove all the air from the bottle helps to extend the shelf life?


It certainly helps, as it creates a mini vacuum in the head space (ie: less air).

Ideally, you should get some sort of small CO2 gas mini gun, that is best, as it then displaces all the air w/ CO2, just as we do in the winery.

Failing that, the vacuum method is better than nothing, however, please do not expect the wine to last more then 2-3 days, if that.
