Title:  Fining

I noticed you mention using egg whites to fine your red wine. Is white wine not fined? I have a dairy allergy and was researching the use of casein as a fining agent. Do you know if it is used extensively? 


We do not use casein, however some wineries do, and usually for reds. Our white wines are not fined per se'. We do treat them with a light bentonite addition during fining for protein stability, but that is then filtered out.
