<p>How reassuring it is to see a wee bit more light slipping around the edges of the window shade every morning? Spring is officially here! </p>
<p>The extra sunshine does more than pump up our Vitamin D levels. Those additional daylight hours – and more powerful, sunshine-driven warmth – helps Mother Nature deliver us the widely diverse, seasonal bounty of spring fruits and vegetables.</p>
<p>Yet, winter often resists transitioning into spring. The overlapping of marvelous spring weather with winter’s bitter cold remnants can mirror the best seasonal vegetables and fruits: we have to take a <em>carpe diem</em> approach and enjoy them while we can. Unlike other seasons, where there the bell curves are broader, some of the most coveted spring fruits and vegetables don’t stay around for long.</p>
<p>So, take heed to these spring season produce and wine pairing suggestions below. Blink, and they’ll be gone until next year!</p>
<h2>WHY PAIR SPRING WINES WITH SPRING PRODUCE</h2>
<p>It would seem that the palette for pairing wines with spring fruits and vegetables would appear light, lighter and lightest. After all, the seasonal food transition moves from the <a href="https://www.kj.com/blog/pairing-wine-winter-fruits-and-vegetables">hearty, durable consumables of winter</a>, like apples and potatoes, to the tender, delicate ones like strawberries and morel mushrooms.</p>
<p>This means that the early phase of spring produce differs from the later one. It’s a progression, not a flip! Happily, this provides an array of options for spring wine pairings that is gratifyingly diverse. Moreover, since we’re being so good about indulging in our spring veggies and fruits, we clearly deserve the reward of a nice glass of wine!</p>
<p>There’s no better way to get in the mood for spring food and wine pairings like joining one of the <a href="https://www.kj.com/farm-to-table">upcoming Farm-to-Table dinners</a> at the <a href="https://www.kj.com/visit">Kendall-Jackson Wine Estate & Gardens</a>. But if inspiration waves its wand over your kitchen before those gatherings begin, just reach for the <a href="http://www.seasoncookbook.com/">Jackson Family Wines Season Cookbook</a>. Take your seasonal cooking to the next level by finding local food items to incorporate in these recipes and remember that every market has a slightly different timetable for the arrival of seasonal produce.</p>
<p>That could boost impatience, but why not have it enhance anticipation? When so many ingredients are available to us via traditional grocery stores and supermarkets throughout the year, sticking to the rhythm of the farmer’s market helps to incorporate the element of surprise and rarity of what’s at its peak for your <a href="https://www.kj.com/blog/your-fantastic-farm-fork-guide">farm-to-fork or field-to-fork food and wine pairings</a>.</p>
<h2>WINE PAIRINGS FOR SPRING VEGETABLES AND FRUITS</h2>
<p>The key to spring food and wine pairings is matching weight and intensity. Spring meals turn lighter as the season segues into summer, so the wines paired with spring dinners or spring Sunday lunches probably should lighten up, too.</p>
<p>Furthermore, spring is a wonderful time for plant-based diets. It’s “Game on!” for vegetarian cuisine with wine as well as vegan meals with wine. However, there are not many traditional wine pairings for vegetarian or vegan cuisine. That doesn’t make it hard to create a wine pairing symbiosis for vegan and vegetarian lifestyles though.</p>
<p>Even if you are incorporating animal protein or fish in your seasonal wine pairings, <strong>here are some universal rules for pairing wine with fruits or vegetables that are in season in spring</strong>:</p>
<ul>
<li>Generally, the lighter the spring fruit or spring vegetable color, the lighter the wine’s color should be.</li>
<li>For the lightest colored spring vegetables and fruits, the best wine pairings tend to have no to very little new oak or other new wood barrel use during the wine’s production. (New wood influences give wines baking and cooking flavors, such as toast, caramel and butter.)</li>
<li>Similarly, the more a spring vegetable or a spring fruit is cooked, the more new oak influence the paired wine could support. This is because the addition of heat adds another flavor layer, called caramelization, to produce. However, most veggies and fruits on their own are best with no to minimal oak influence, even when undergoing in-depth cooking like roasting.</li>
<li>I’ve written before about <a href="https://www.kj.com/blog/pairing-wine-summer-fruits-and-vegetables">challenging seasonal vegetable wine pairings</a>. The most notorious are artichokes and asparagus. However, spring graciously gives us two notable exceptions here with spring artichoke and white asparagus. Both are much milder than their later season siblings, allowing them to pair with milder (in this case, less herbal and grassy) wines like <a href="https://www.kj.com/wine/pinot-gris">Pinot Gris</a>.</li>
</ul>
<h2>SAUVIGNON BLANC PAIRINGS FOR SPRING PRODUCE</h2>
<p>Speaking of asparagus – the green kind that we are most accustomed to seeing, the tiny and tender spring version absolutely kicks in a <a href="https://www.evolvingtable.com/cream-of-asparagus-soup-vegan/">Cream of Asparagus Soup</a> with <a href="https://www.kj.com/wine/vintners-reserve/sauvignon-blanc">Vintner’s Reserve Sauvignon Blanc</a>! Linking in similarly vivid, “green” or “grassy” spring flavors, limes and salad greens are also excellent spring wine pairings with <a href="https://www.kj.com/wine/sauvignon-blanc">Sauvignon Blanc</a>. One of my favorites is the fleetingly rare fiddlehead fern, which kind of looks like a wound-up asparagus and tastes about the same. Springtime is an ideal season for pairing bright white wines and vegetables.</p>

<h2>CHARDONNAY PAIRINGS FOR SPRING PRODUCE</h2>
<p>Chardonnay is an impressively flexible grape. It can be as restrained or as lush as the winemaker wants it to be. Its trendy, unoaked versions – less well-known than its usual, lushly oaked styles – are brilliant for pairing fruit with wine, especially pick-of-the season lemons. Check out this <a href="https://therecipecritic.com/creamy-lemon-chicken-piccatta/">Lemon Chicken Piccatta</a> with the <a href="https://www.kj.com/wine/avant/chardonnay">K-J Avant Chardonnay</a> if you’re looking for a mouth-cleansing sort of finish.</p>

<p>Alternatively, if you want to match up to the dish’s creamier sensations, go with the wine that started it all for Kendall-Jackson, the <a href="https://www.kj.com/wine/vintners-reserve/chardonnay">Vintner’s Reserve Chardonnay</a>. Its toasty character and riper, tropical fruit flavors will mesh enticingly, if differently, with the creamy sauce. Other peak-season fruit pairings with wine that smack of deliciousness here include pineapple and the rather exotic jackfruit. Chardonnay with double cream or triple cream cheeses and these fruits are truly divine. It’s a welcome overload of smooth and supple textures!</p>
<p>If pairing fruit with wine is less your mojo than vegetable wine pairings, check out the Season Cookbook’s Spring Vegetable & Herb Quinoa Porridge. It’s a colorful feast for the eyes as much as it is a flavor and nutrition kick for the taste buds and tummy. The expansive texture of the quinoa and fava beans coupled with crème fraiche will harmonize nicely with an oaked <a href="https://www.kj.com/wine/chardonnay">Chardonnay</a> companion, especially those from the <a href="https://www.kj.com/wine/jackson-estate">Jackson Estate collection</a>.</p>
<h2>ROSÉ FOR SPRING WINE PAIRINGS</h2>
<p><a href="https://www.kj.com/wine/rose">Rosé</a> is a unique cross-over between red and white wine styles, giving it impressive versatility. Rosé is one of the most friendly options for fruit and wine pairings, and it also works well for wine pairing with vegetarian recipes. Rosé is always a winning wine pairing with fruit and cheese!</p>

<li>Hot tip: Our culinary team suggests dipping a leaf of the green you are using into the salad dressing while you make it to see how it tastes. Not making dressing? No worries! The same holds true with store-bought salad dressing. Before you dress everything, test it first with your combination of seasonal greens and fruits!</li>
</ul>
<p>Finally, if you are lucky enough to have a geeky grower market nearby and can find the briefly available ramps and garlic scapes, rosé is unquestionably your best wine pairing. Ramps are sometimes called wild leeks and resemble scallions, but they are generally stronger than both – somewhere closer to a sweet onion. The complimentary garlic scapes are “greener” and more similar to chives. Both of these springtime farmer’s market specials excel in savory character, a perfect contrast to the zippy acidity and succulent fruit flavors of rosé wines.</p>
<h2>PINOT NOIR PAIRINGS FOR SPRING CUISINE</h2>
<p><a href="https://www.kj.com/wine/pinot-noir">Pinot Noir</a> is often associated with fall flavors given its tendency to exhibit earthy and autumnal aromas. Were there a classic non-protein with a red wine, it would be Pinot Noir and mushrooms. Of course, mushrooms technically are neither spring vegetables nor spring fruits; they have neither leaves nor seeds. As fungi, they aren’t even plants! However, because they are fibrous and frequently served as a side dish, we tend to lump them into the vegetable category.</p>
<p>For spring season dishes with Pinot Noir, any of the series of traditionally spring mushrooms works beautifully. Morels, oyster and hen of the woods mushrooms along with spring porcini have a brighter, less earthy tone. Moreover, many spring vegetables bring a gentle sweetness to dishes, just like English peas. <a href="https://cooking.nytimes.com/recipes/1017022-mushroom-risotto-with-peas">Mushroom Risotto with Peas</a> is a lovely meal that brings hearty comfort with fresh, spring flavors when wintery nights persist! Because of this recipe’s lifted and nuanced flavors, I would pair this vegetarian recipe with a lighter red wine like the <a href="https://www.kj.com/wine/vintners-reserve/pinot-noir">Vintner’s Reserve Pinot Noir</a>.</p>

<p>For a meatier, heftier Pinot Noir, I would revert to the <a href="https://www.kj.com/wine/pinot-noir">Jackson Estate Range</a> and pair it with succulent spring lamb. The Season Cookbook’s recipe for Braised Lamb Belly with Farro, Seared Turnips and Ramps works particularly well with darker expressions of Pinot Noir, like the <a href="https://www.kj.com/wine/jackson-estate/outland-ridge-pinot-noir">Outland Ridge</a> and <a href="https://www.kj.com/wine/jackson-estate/anderson-valley-pinot-noir">Anderson Valley</a> bottlings, thanks to the intense flavor of the braised belly meat. With this Pinot Noir food pairing, it’s the turnips that blend with the Pinot’s earthy flavors. Additionally, spring gives us “baby turnips”, which are much sweeter than the larger, more fiber-filled turnips stacked on fall’s farmer’s market stands. This makes for a seamless mouthfeel alongside Pinot Noir’s velvety tannins.</p>
<h2>CABERNET SAUVIGNON WITH SPRING VEGETABLE PAIRINGS</h2>
<p>The vigor of <a href="https://www.kj.com/wine/cabernet-sauvignon">Cabernet Sauvignon</a> can make it seem like a wine destined to drop off the wine and food pairing list as spring arrives. However, Cabernet Sauvignon is a brilliant match for early spring wine pairings, like <a href="https://www.foodnetwork.com/recipes/ree-drummond/beef-with-broccoli-2495686">Beef with Broccoli</a>. The weight of Cabernet Sauvignon stands up to the power of this recipe’s red meat, and Cabernet Sauvignon’s evergreen or bell pepper tones mesh well with this noble grape variety’s “green tones”. (Geek alert: pros call these green flavors pyrazines.) This is but one example of how red wines blend along with spring vegetables into new seasonal pairings!</p>

We're lucky to be able to feature local Dungeness crab on our tasting room menus throughout crab season. So we cook tons of crabs (literally!), and that means we have plenty of shells on hand for making stock, which is the secret to rich seafood soups like this one. You’ll be amazed at how much flavor you can get from just a few crab shells. Cauliflower is also the secret ingredient that gives this soup the sweet, creamy smoothness of a lobster bisque.</p>

<h3>To cook the crabs:</h3>
<p>In a large stockpot, combine 8 qt water, the vinegar, and kosher salt and bring to a rolling boil over high heat. Add the crabs, return the water to a boil, and cook for 13 minutes, or until the meat is opaque and the internal temperature registers 165°F. Carefully remove the crabs from the pot and let them cool until they can be handled.</p>
<p>Turn a crab belly side up and pull off and discard the triangular flap. Flip the crab over and, working from the rear end, pull off the back shell. Pull off and discard the spongy gills and any trace of red membrane from the body. Twist off the legs and claws from the body, then cut the body in half lengthwise and rinse the halves briefly with cool water. Using Joyce Chen scissors or a crab cracker, cut or crack the leg and claw shells open, then pick the meat from the body, legs, and claws. Repeat with the second crab. You should have about 1 lb crabmeat. You will need only half of the crabmeat for this recipe. Put it into a medium bowl. Reserve all of the crab shells (for the stock) and the remaining 1/2 lb crabmeat for making the Dungeness Crab & Cauliflower Soup. If not using within 2 days, the stock and the crabmeat can be frozen for up to 1 month.</p>

<h3>To make the crab stock:</h3>
<p>Preheat the oven to 350°F. Spread the crab shells on a half sheet pan and roast in the oven for 15 minutes.</p>
<p>Transfer the crab shells to a medium pot and crush with a meat mallet. Add the onion, carrot, celery, bay leaf, thyme, wine, and 3 qt cold water. Bring to a boil over high heat, reduce the heat to a simmer, and cook for 30 minutes. Remove from the heat, strain through a fine-mesh sieve, and let cool. Measure 2 qt for the soup; reserve the remaining stock for another use.</p>
<h3>To make the soup:</h3>
<p>Remove the green leaves and the bottom 1 inch of the cauliflower stem and discard. Remove 12 small florets and reserve. Thinly slice the remaining head, including the stem, and set aside.</p>
<p>Fill a medium pot with water, add 1 tablespoon salt, and bring to a boil over high heat. Fill a medium bowl with water and ice. Add the12 cauliflower florets to the boiling water and blanch for 1 minute. Drain immediately and plunge the florets into the ice bath to halt the cooking. As soon as the florets are cold, remove from the ice water and spread on a paper towel to dry.</p>
<p>In a large pot, heat the rice oil over medium heat for 1 minute. Add the onions and 1 tablespoon salt and cook, stirring often, for 3 to 5 minutes, until soft and translucent. Add the garlic and cook for 1 minute. Add the sliced cauliflower, cover, and cook, stirring occasionally, for about 8 minutes, until beginning to soften. Uncover, add the stock, cream, bay leaf, thyme, and fennel seeds, and stir to mix. Bring to a simmer and cook uncovered, stirring occasionally, for about 1 hour, until the cauliflower is tender.</p>
<p>Remove from the heat, remove and discard the bay leaf, and let cool slightly. Working in batches, transfer the soup to a blender and process until smooth, pouring the puree into a clean medium pot as each batch is ready.</p>
<p>To serve: Place the soup over medium heat and bring just to a simmer. Season with salt and the lemon juice.</p>
<p>Place 3 blanched cauliflower florets and one-fourth each of the crabmeat and lemon zest in each individual serving bowl. Ladle the hot soup into the bowls and serve immediately.</p>

<p>In a bowl, combine all ingredients except for 1 cup of panko, crab, and clarified butter. Mix ingredients thoroughly and then gently add the crab, being careful not to overwork the crabmeat. Form into patties and coat on top and bottom with the remaining panko (2-ounce cakes for an appetizer or larger for a sandwich or plated courses).</p>
<p>Heat a non-stick pan over medium heat and add clarified butter. Once the butter has melted, sauté cakes on both sides until golden brown. Serve with a dollop of lemon aioli. Leftover formed crab cakes can be frozen for several weeks.</p>
<h3>For the lemon aioli:</h3>
<p>In a medium bowl, whisk the egg yolk, lemon juice, lemon zest, and Dijon mustard. Begin whisking in the vegetable oil, a few drops at a time. Once you have incorporated half of the vegetable oil, you can increase the amount of oil streamed in. Add the olive oil in the same manner. Season with salt.</p>

Whether you're a seasoned baker or a novice in the kitchen, let Chef Alexa help you perfect the art of festive baking. From time-saving tricks to creative decorating ideas, here is her sleigh full of holiday baking tips to ensure your kitchen becomes a hub of delicious joy.</p>
<h2>Alexa's Top Tips</h2>

<p class="roboto-gold"><strong>Plan ahead and don't overcommit.</strong> Baking should be fun, not stressful. And while it may be tempting to try out all of the fancy recipes you found on <a href="https://www.pinterest.com/kjwines/">Pinterest</a>, choose only one or two new recipes and stick to what you are comfortable and familiar with. Make a shopping list, print out recipes, use Post-its to organize your bakeware, and create yourself a schedule. Don't be afraid to do some prep work and make base ingredients ahead of time.</p>

<li>
<p class="roboto-gold"><strong>Baking is fun but precision is important. </strong>While we love to get creative in the kitchen, many classic recipes require a methodical approach. Be sure to read the recipe ALL the way through before you start. Use a scale to measure your ingredients. If a recipe calls for a room-temperature ingredient, be sure to follow it. As stated in tip #1, make sure you are stocked up on ingredients and create a detailed shopping list to avoid having to run to the store mid-project or having to ask your neighbor for more sugar.</p>

<p class="roboto-gold"><strong>Don't overmix your ingredients!</strong> Unless your recipe calls for smooth, completely blended ingredients, don't be afraid of a little lumps and clumps. </p>

Be sure to have 2-4 flat sheet pans of varying sizes which are great for cookies, cakes, and roasting savory foods as well. If you plan on making a lot of cookies, an ice cream scoop is a helpful time saver and it helps to keep your cookies uniform.</p>

<li>
<p class="roboto-gold"><strong>Improvise if you need to. </strong>A favorite trick of Alexa's is quite fitting– use a full, unopened bottle of wine as a rolling pin. </p>
</li>
<li>
<p class="roboto-gold"><strong>Get to know your oven.</strong> Home ovens are not all created equal and depending on the age, brand, and style, you may need to make some modifications for the bake time. Be sure to fully pre-heat. Rotate your pans midway through. And keep an eye on your goodies to adjust baking times as necessary.</p>

<p class="roboto-gold"><strong>Chill out. </strong>When it comes to cutout cookies or anything that requires a cookie-cutter, keep the dough cold. Roll it out on parchment paper, but not too thin. Chill or freeze your cut cookies before baking to help them keep their shape.</p>

<p class="roboto-gold"><strong>The perfect royal icing. </strong>For just the right consistency, Alexa likes to add water slowly and uses meringue powder instead of raw egg whites. </p>

<p class="roboto-gold"><b>For serving and sharing: </b>Purchase reusable tins at the dollar store as easy air-tight gift boxes for homemade goods. Alexa also loves to collect second-hand plates at thrift stores and use them wrapped in a festive dishcloth– anything to avoid creating more packaging and trash. </p>

<li>
<p class="roboto-gold"><b>One main dessert or a holiday spread? </b>We could have guessed this one, but Alexa likes a variety of smaller bites vs. one star of the show.Since there is so much food around the holidays, if there is a main dessert, most are too full in that moment. But guests will likely graze later on or even before dinner on smaller items. Plus, you can save the leftovers to have with coffee on Christmas morning. </p>
</li>
<li>
<p class="roboto-gold"><strong>Go-to quick holiday dessert: </strong>“Candy Cane” cream puffs– it's SO simple, use classic cream puff shells filled with whipped cream that has been infused with crushed candy canes.</p>
</li>
<li>
<p class="roboto-gold"><strong>Go-to "store-bought" dessert: </strong>Ice cream bars or sandwiches… Alexa is obsessed with <a href="https://www.itsiticecream.com/">It's-It</a>– a San Francisco classic! </p>

To date, over $550,000 has been granted to over 2,300 grocery workers.</p>

<p><em class="italic-large">To celebrate the launch of our Albariño, we're sharing the following recipe from our very own <a href="http://www.seasoncookbook.com/">SEASON cookbook</a>. The combination of creamy potato, herbs, and minerality from the trout pairs perfectly with the lively acidity, citrus and stone fruit of the wine creating a lovely texture with every sip and a long finish after every bite.</em></p>
<p> </p>
<p>Here in the K-J kitchen, we love smoking our ingredients. In fact, Chef Justin was gifted a Cameron stove-top smoker in high school and it’s the same one we still use in our kitchens today. We like what it does to fish, especially trout. Our trout is sourced from Mt. Lassen Trout, a sustainable farm fed by the pristine cold-water springs at the foot of Mount Lassen, a volcano located about 5 hours away from our Wine Estate & Gardens in Northern California. The fish is meaty yet delicate, with the pink color of salmon. We like to give it a quick cure and then smoke it—just until it’s perfectly cooked through—over wood chips made from our retired wine barrels. If you’re used to store-bought smoked trout, this homemade version will surprise you with its silky texture and mild smoky flavor. We serve it with young broccoli and a potato salad made with dry-farmed potatoes from David Little at The Little Organic Farm in nearby Petaluma, California. They’re so wonderfully potatoey that we like to puree some of them and fold them into the creamy dressing, which gives us a salad that tastes more like potato and less like mayo. Trout roe adds a fun counterpoint of color, crunch, and briny depth.</p>

<li>11⁄2 lb Yukon Gold potatoes, peeled and cut into medium dice</li>
<li>Kosher salt</li>
<li>1 tablespoon Champagne vinegar</li>
<li>1⁄4 cup mayonnaise</li>
<li>1 tablespoon grated fresh horseradish</li>
<li>1 tablespoon minced shallot</li>
<li>2 teaspoons minced fresh chives</li>
<li>1 tablespoon trout caviar, preferably Tsar Nicoulai Gold Pearl</li>
</ul>
<p><strong>For serving:</strong></p>
<ul>
<li>2 tablespoons Meyer lemon juice</li>
<li>1 tablespoon grated fresh horseradish</li>
<li>1⁄4 cup extra-virgin olive oil</li>
<li>Kosher salt and freshly ground black pepper</li>
<li>1 tablespoon chopped fresh flat-leaf parsley</li>
<li>2 teaspoons minced fresh chives</li>
<li>6 oz young broccoli florets, blanched for</li>
<li>2 minutes, drained, and chilled</li>
<li>3 tablespoons trout caviar, preferably Tsar Nicoulai Gold Pearl</li>
<li>Zest of 1⁄2 Meyer lemon, removed in strips with a channel knife</li>
<li>Maldon sea salt, for finishing</li>
</ul>

<h2>RECIPE INSTRUCTIONS</h2>
<p><strong>To season the trout:</strong> In a small bowl, stir together 1 tablespoon salt, sugar, and lemon zest. Evenly distribute the salt mixture on both sides of the trout portions. Wrap the trout in plastic wrap and refrigerate for 2 hours. Rinse the trout under cool running water and pat dry with paper towels.</p>
<p><strong>To smoke the trout: </strong>Place the wood chips in the center of a stove-top smoker. Place the smoker on the stove over high heat for 1 minute and then light the chips. Close the smoker lid and allow the chips to smoke for 3 minutes to burn away the bitter smoke flavor. Turn down the heat to low, open the smoker, and blow out any flame from the chips. Place the trout portions on the smoker grate and place the grate in the smoker. Smoke the trout, leaving the smoker lid slightly open, for 10 to 15 minutes, until just cooked through and aromatic with smoke; the timing will depend on the thickness of the fillet. Transfer the trout to a large plate. Pro tip: If you don't have an exhaust hood and a well-ventilated kitchen, do your smoking outside, setting the smoker over a portable burner or on the grate of your grill over direct heat. Light the chips and wait for a few minutes. When the smoke no longer looks dense and green, you're ready to start smokin'! </p>
<p><strong>To make the potato salad</strong>: In a 3-qt pot, combine the potatoes, 2 tablespoons salt, and 6 cups water and bring to a boil over high heat. Reduce the heat to low and simmer for about 21/2 minutes, until the potatoes are tender. Using a slotted spoon, remove two-thirds of the potatoes, draining well, and transfer to a medium bowl. Sprinkle with the vinegar and toss to coat evenly. Set aside to cool. Cook the potatoes remaining in the pot for 2 to 3 minutes longer, until very soft. Drain immediately, transfer to a medium bowl, and let cool to room temperature. Add the mayonnaise, horseradish, and 1/2 teaspoon salt and stir until well mixed and creamy. Add the reserved cooled potatoes, shallot, chives, and roe and stir gently to mix. Cover and refrigerate until ready to serve.</p>
<p><strong>To serve:</strong> In a small bowl, whisk together the lemon juice, horseradish, and oil to make a dressing, then season with kosher salt and pepper. Stir in the parsley and chives just before serving. Divide the potato salad evenly among individual serving plates. Top with the trout, broccoli, and roe, dividing them evenly. Drizzle with the dressing, sprinkle with the lemon zest and Maldon salt, and serve immediately.</p>

If you've ever visited our Wine Estate & Gardens during the summer months, chances are you've enjoyed a dish made with a <a href="https://www.drycreekpeach.com/">Dry Creek Peach</a>– a favorite local purveyor we often feature in our <a href="https://www.kj.com/visit/culinary-experiences">Wine & Food Experience</a> and at our <a href="https://www.kj.com/farm-to-table">Farm-to-Table dinners</a>. So if you're like us and are looking for the perfect pairing for your bounty of perfectly ripe peaches, look no further. Let's explore why peaches and Riesling are a match made in summer heaven. We'll delve into the flavor profiles that make them the ultimate power couple, share tips on selecting the juiciest peaches, and share a few culinary creations you can whip up to truly celebrate this pairing perfection.</p>
<p><strong>Picking the Perfect Peach </strong></p>
<p>Peaches are synonymous with summer. Across the U.S., peak peach picking season is typically late May through September. Depending on when they are picked, your fruit may not be ready to eat and may require some additional ripening time. So, how do you know when your peach is ripe and ready? First, look at the color. Contrary to popular belief, you want there to be an abundance of yellow, an indication the fruit is ripe versus deep orange, an indication your peaches are overripe. If your fruit doesn't feel or look quite ready, simply place a single peach in a paper bag, fold it bag closed, let it sit at room temperature and it should ripen to perfection within two days.</p>
<p><strong>A Perfect Pair: Peaches and Riesling </strong></p>
<p>When it comes to the best wine to pair with the ripest, juiciest peaches, we love a chilled bottle of Riesling. The sweetness of the peach naturally complements this wine variety's aromatics and crisp flavor. <p><strong>Recipe: Peach Toast with Garden Honey & Basil </strong></p>
<p>For maximum flavor enjoyment, the best way to pair peaches and Riesling is often the most simple. That's why grilled peaches have become a go-to for picnics, BBQs, or just a quick snack perfect for lounging around in your backyard. Here's how to make one of our favorite dishes that combines the delectable flavors of ripe fruit, honey, basil, and crunchy salt:</p>
<ul>
<li>Slice a fresh sourdough loaf or baguette into 1-inch thick slices. Fire up your grill and lightly brush both sides of each bread slice with oil (about 1 tablespoon per slice) and sprinkle with kosher salt. Grill the slices, turning once, until golden brown on both sides. Using tongs, transfer the slices to a serving platter. </li>
<li>Slice at least 3 ripe peaches by halving them, removing the pit, and cutting into equal slices. Top the baguette slices with the peaches, dividing them evenly.</li>
<li>Drizzle each peach-topped toast with a tablespoon of local honey and 1 tablespoon olive oil. Sprinkle with sel gris (aka flaky sea salt) and garnish with fresh basil leaves.</li>
<li>For a more substantial version, layer on a paper-thin slice of prosciutto or creamy cheese such as Crescenza or Taleggio. </li>

<p>Wondering what wines work with Easter lamb? Or, are you choosing wines for Easter ham? Are you serving Easter lunch or Easter dinner? Maybe a mid-day Easter brunch? Whatever the scenario, our team at Kendall-Jackson has collaborated to have you ready in short order with this look at the<strong> </strong>best Easter wines. </p>
<h2>Easter Wines</h2>
<p>An important focus of any Easter meal is bringing together family and friends. Other than that we know the story of the Last Supper included wine – and that the wine was red – there are no traditional Easter wines. So, as it is a major holiday, select some of your favorite wines (whether based on grape variety or region) or wines that have a significant meaning to you.</p>
<p>The number of merrymakers and your wallet’s padding are worthy of consideration, too. If your gathering will be more intimate or if your budget allows, trade up! <a href="https://www.kj.com/wine/grand-reserve">Grand Reserve</a> and <a href="https://www.kj.com/wine/jackson-estate">Jackson Estate</a> wines offer greater flavor intensity. <p>First is the age of the lamb. Spring lamb’s more delicate flavor marries more easily with lighter reds – or at least reds with softer tannins – while bolder reds work better with the heartier flavor of mature lamb. For spring lamb, try a <a href="https://www.kj.com/wine/pinot-noir">Pinot Noir</a> or a <a href="https://www.kj.com/wine/merlot">Merlot</a>. <h2>Wines with Easter Ham</h2>

<p>If you are serving an Easter ham dinner, your rainbow of wine colors expands to include whites and <a href="https://www.kj.com/wine/vintners-reserve/rose">Rosés</a> along with light to mid-weight reds. As with lamb, there are clear-cut ways to fine-tune your pairings.</p>
<p>The major pairing consideration is ham’s inherent sweetness, even when it has savory influences from seasonings or cooking techniques. This sweetness warms up to fruit-forward wines of any color. In the red category, this specifically includes wines with gentle tannins that won’t create a sharp contrast to the ham’s sweetness.</p>
<p>After that, what kind of ham will you serve: spiral, bone-in, country or grilled fresh ham? One of these cuts that has been smoked? How about glazed ham?</p>
<p>City hams, which are the most common in the USA and also are referred to as wet-cured hams, are the sweetest and most succulent. This category includes spiral hams, but keep in mind that spiral hams can be smoked. (If yours is smoked, see below.) City hams’ gentle flavor works best with milder whites, such as the <a href="https://www.kj.com/wine/avant/chardonnay">K-J AVANT Chardonnay</a>.
