Panna Cotta
I read Chef Pollnow's recipe for Pomegranate Panna Cotta in the Press Democrat on 2-10-10. Can powdered gelatin be substituted for gelatin sheets? How? If not, where in the Petaluma area would one buy gelatin sheets? Thank you.
Yes, you can substitute powdered gelatin for the sheets. One envelope of powdered gelatin is equal to 3 (2 grams) sheets. Let us know if you have any other questions. Enjoy!

Wow! It was awesome. (Juk and Pumpkin Soup)
Had the opportunity to go to your friends and family last night (Dec 9th). It was a great time! I was very-very impressed with the dishes served. One was a dish called Juk from China and the other was a Pumpkin Soup. Both were excellent. I was wondering if you were going to post these on your website. I really would love to have the Pumpkin Soup recipe due to the fact I currently have 6 or 7 pounds of fresh frozen pumpkin that I need to do something with. I attempted to find one of the chefs, but about the time I was looking, nobody was around. Had a great time and looking forward to hearing from you.
We’re glad you enjoyed the Friends and Family event. Please click here to find the recipes for Juk and Curried Pumpkin and Butternut Squash Soup. Happy New Year!

Tri-Tip steak recommendation and recipes
Hey Justin, Chris Owens and Winn Holley from Tryon, NC here, we were there on Monday, Nov. 9th. and we were able to meet you and you introduced us to tri-tip steak during the wine & food pairing. We took your advice and tried the Firestone Grill in San Luis Obispo, the tri-tip there was outstanding !!! Thanks, Chris
I’m glad you enjoyed the tri-tip. Tri-tip is a great cut of meat and it is California’s version of barbeque. Please be sure to check our own tri-tip recipes:

Pork Stew
Last year during the barrel tasting you had a delicious pork stew that I believe included some flavors of sour kraut and juniper berries. I cannot find the recipe on your website. Would you post it?
We’re so glad to hear that you enjoyed the Choucroute (this is the French word for sauerkraut). Please find the recipe by clicking
here. Enjoy and let us know if you have any questions.
