Reserve Wine & Food Pairing

Kendall-Jackson Executive Chef Justin Wangler has created a seven course pairing focusing on the winery's small-production, limited release wines.

2008 Grand Reserve Sauvignon Blanc
Grilled Fava Pods with Meyer Lemon and Estate Olive Oil
Using an uncommon preparation, whole fava bean pods from our garden are grilled, maintaining the natural sweetness while also highlighting the fruit-forward aroma in the wine. To showcase both the crisp acidity and light grassy elements of our Grand Reserve Sauvignon Blanc, we finish the fava beans with fresh lemon juice and our estate olive oil.

2007 Highland Estates Camelot Highlands Chardonnay
Pumpkin Johnny Cake with Tsar Nicoulai Trout Roe and Crème Fraiche
The rich mouth feel of the crème fraiche pairs well with this full bodied Chardonnay while the salty trout roe plays off the wine's balanced acidity. A hint of preserved Meyer lemon highlights the citrus flavors in the Chardonnay.

2006 Highland Estates Seco Highlands Pinot Noir
Buckwheat Crepe with Smoked Ham Hocks and Bellwether Farms Caromody Cheese
Grilled spring onions and smoked ham hocks are combined with the wonderful melting local Carmody cheese to create an almost quesadilla like effect to pair with this light and earthy Pinot Noir.

2006 Highland Estates Alisos Hills Syrah
Sweet Tea Brined Kurobuta Pork Belly Slider with Syrah BBQ Sauce
For our sliders, we cook Snake River Farms pork belly low and slow and then dress each slice with house-made Syrah BBQ sauce. It may be a small sandwich but the flavor is big enough to hold up to the long finish of our 2006 Syrah.

2005 Highland Estates Trace Ridge Cabernet Sauvignon
Korean Style Kobe Beef Lettuce Wrap
To hold up to this full bodied, complex mountain Cabernet Sauvignon we borrowed the intense flavors of Korean barbeque. Skewered Kobe tri-tip is marinated and grilled before being wrapped in a lettuce cup from our garden.

2006 Late Harvest Chardonnay
Mama Frischkorn's Caramel Corn
This lush and indulgent dessert wine pairs perfectly with an old family recipe for caramel popcorn.

2007 Late Harvest Riesling
Arborio Rice Milk Panna Cotta with Blood Orange Curd and Marinated Citrus
Using the flavor profile from the popular Mexican drink, Horchata, we've created an interesting take on the classic Panna Cotta Dessert. With the addition of citrus and orange curd, this dessert is the perfect way to end a meal when paired with our Late Harvest Riesling.
