What is Verjus?

Have you heard of verjus? If not, let us tell you more…

Verjus means “green juice” in French. It is a flavorful juice pressed from grapes harvested very early in the season, with bright flavors and crisp acidity that add intense fruit accents to recipes. Verjus is less intense than vinegar and adds complexity to salad dressings, beverages and sauces. We have just added our Kendall-Jackson Red Verjus to our website so you can try some!

Thyme Verjus Dressing

  • 1/3 cup Kendall-Jackson Red Verjus
  • 1/3 cup grapeseed oil
  • 1 large shallot, finely chopped
  • 2 teaspoons fresh thyme leaves

Whisk all ingredients in a small bowl to blend. Season dressing to taste with salt & pepper. This verjus dressing is delicious on grilled pear salad with feta & hazelnuts on a bed of butter lettuce.
